1.18.12 Eats


I took the day off from running today, so after a 25 minute yoga session (I could not believe how tight my poor legs and hips were), I made this pretty bowl. Banana oats with cinnamon, blackberries, peanut butter, and a drizzle of honey. Have you ever had peanut butter in oatmeal? It is magic.

A quick apple before work.

I always have a snack before work, because when a 2 month old infant runs the show, it’s impossible to know when the next eating opportunity will arise.

The lunch I packed for work:

a (mangled) piece of enchilada casserole (TVP, bell peppers, onions, black beans, tomatoes, brown rice tortillas, salsa verde, and black olives), and cucumbers + tomatoes.

and dried cherries. I almost always pack more food than I actually eat at work, but better safe than sorry. I only ended up eating a couple of the almonds.

Greg is working late at a concert tonight, so I took the night off from the kitchen. Dinner was this glorious thing from Chipotle.

Now that I know Chipotle has brown rice, I am all over that shit. This wonderful creation consisted of brown rice, black beans, pico, hot salsa, lettuce, guac, and some sautéed veggies. So. Freaking. Good.

I’m off to read and relax, and when Greg gets home, it’s popcorn and Portlandia. I need to bask in my last few nights off. I seriously can’t believe I start school on Monday! Oh, to be back in a laboratory. I’m beyond excited.

Do you think carrying a baby for 6 hours counts as an upper body workout?


  1. I had tamari-roasted almonds all day for snacks. They really hit the spot, but I know sprouted nuts and seeds are better for you. I’m thinking of sprouting them, then tossing them with some tamari and eating them with a spoon at work.

    • That sounds awesome! For some reason I can’t really get into sprouted nuts and seeds. I should probably try harder to acquire the taste.

      Hm, this could be an excellent benefit of being a nanny. Mom biceps without the whole actually being a mom thing?

    I’m still getting back to old emails. Your last one made me smile when you said that the post office was closed because it was “still” a holiday. I had a day like that yesterday. Glad to know I’m not alone.
