Vegan Thanksgiving Menu

Good evening!

I think I’ve finally settled on a Thanksgiving menu, and we’re off to finish up our shopping after dinner. I hope the grocery stores aren’t ridiculously crowded…

Here’s what we’re doing for a simple, classic, vegan Thanksgiving feast.

Of course, there will be Tofurky. I toyed with the idea of trying to make our own main course, but Tofurky is one of my guilty pleasures, and we only have it a few times a year.

For potatoes, I think I’ll go with Vegan Herb Mashed Potatoes from choosingraw.com with Mushroom Miso Gravy. I love the idea of mashed potatoes with fresh herbs + nutritional yeast.

Our stuffing will be a simple recipe that my parents use, which includes sourdough bread, onions, celery, Earth Balance, vegetable broth, and herbs. I’m thinking of adding mushrooms (I think Greg would probably like that). I’ll post the official recipe soon!

One of Greg’s favorite Thanksgiving dishes is green bean casserole. I have never attempted a vegan version of this dish, but I found one here on fatfreevegan.com. I’ve never tried a recipe of Susan’s that I didn’t like, so I think we’ll give it a go!

It simply would not be Thanksgiving without my mom’s cranberry relish. I think I’m looking forward to this recipe more than anything!

There’s a good chance that there will also be brussels sprouts, since they’re a favorite vegetable of ours.

Finally, for dessert, I can’t wait to try Mama Pea’s Pumpkin Molasses Cookie Dough Balls. I had to make something pumpkin, but I also wanted to make something that I thought Greg might be excited about (certainly not pumpkin pie).

I can’t wait to get cooking!

    Dad just finished making a brine for the turkey. He’s very excited about this recipe, maybe because it has three different bottles of dark beer. Since I will be the only one not eating turkey, I’ve decided to pass on the tofurky . I’ll miss not sharing that with you, Greg and Emliy :( I’m okay with that since turkey has never really been a favorite of mine. I think that when I did eat it, I enjoyed it cold on a sandwich. So, as always, I’ll enjoy everything else that goes with it. We will make stuffing, mashed potatoes & gravy, green bean casserole and cranberry relish. I made some banana bread and oatmeal cookies. Aunt Amy is bringing pumpkin pie and rolls. I thought that would be good as far as desserts go, but Dad found a recipe for apple cranberry pie. I have to try this one! It look’s wonderful! The day will not be the same without my kids, but if you can’t be with the ones you love, love the ones you’re with. So looking forward to our time together. Less than 4 weeks!   3. We’re sharing the work for a meal with some of our friends… I’m bringing garlic red mashed potatoes, a really nice cranberry chutney and a pumpkin pie.

    (I’m really excited about the pumpkin pie because I splurged on a spelt pie crust from whole foods, and I’m using organic pumpkin and replacing the sweetened condensed milk with coconut milk).
