Happy Wednesday! The week is more than halfway over!
My flowers from last weekend are still looking beautiful.
I forgot to set my alarm this morning, but ended up being awake 20 minutes before the time I would have set my alarm for. I love being a morning person.
Today was legs day, so I did about 20 minutes of leg work and then went for a quick walk with Greg. I also made another batch of gluten free banana almond muffins! These things are totally addictive, but also pretty healthy for a muffin. When we finished the last batch, I could hardly wait for more bananas to ripen so that I could make them again.
The recipe can be found here. I used goat yogurt, maple syrup instead of honey, and almond extract instead of vanilla extract. (I’m out of vanilla, but the almond was great!)
When we returned from our quick walk, Greg made me an egg and I had this lovely plate for breakfast:
Egg, muffin with half a tablespoon of PB, and a few strawberries. Usually this would fill me up for a bit, but my new strength routine in addition to my usual running is making me crazy hungry.
Before I left for work, I grabbed some rice chex with some almond milk.
I packed a variety of snacks for work because I never know what I’ll want.
I ate the apple and muffin (of course) for a morning snack, and then made an almond milk latte in the afternoon. The other stuff is back in the fridge for another day.
I also packed a couple of these guys, since my throat was feeling scratchy last night.
I love the pink lemonade flavor. It actually tastes quite good over ice.
Lunch was another mess of a salad.
I’ve been making some pretty incredibly tasty and filling salads these days. I can’t believe I used to hate packing salads for lunch!
For dinner, G and I made some delish vegetable egg drop soup, and now I’ve got some tofu and sweet potatoes in the oven for my lunch tomorrow. My day at work was a little on the stressful side, and I’m ready to relax tonight. Like every week, I’m already thinking about plans for the weekend!

After seeing Larabar bars on your blog so many times, I finally broke down and bought a box of the Fruit and Nut version. Tart cherries and half a dozen different kinds of nuts. It’s really tasty.
