I think I’ve finally settled on a Thanksgiving menu, and we’re off to finish up our shopping after dinner. I hope the grocery stores aren’t ridiculously crowded…
Here’s what we’re doing for a simple, classic, vegan Thanksgiving feast.
Of course, there will be Tofurky. I toyed with the idea of trying to make our own main course, but Tofurky is one of my guilty pleasures, and we only have it a few times a year.
Our stuffing will be a simple recipe that my parents use, which includes sourdough bread, onions, celery, Earth Balance, vegetable broth, and herbs. I’m thinking of adding mushrooms (I think Greg would probably like that). I’ll post the official recipe soon!
One of Greg’s favorite Thanksgiving dishes is green bean casserole. I have never attempted a vegan version of this dish, but I found one here on fatfreevegan.com. I’ve never tried a recipe of Susan’s that I didn’t like, so I think we’ll give it a go!
It simply would not be Thanksgiving without my mom’s cranberry relish. I think I’m looking forward to this recipe more than anything!
There’s a good chance that there will also be brussels sprouts, since they’re a favorite vegetable of ours.
Finally, for dessert, I can’t wait to try Mama Pea’s Pumpkin Molasses Cookie Dough Balls. I had to make something pumpkin, but I also wanted to make something that I thought Greg might be excited about (certainly not pumpkin pie).
I can’t wait to get cooking!
